My boyfriend thought these were better than the traditional chocolate chip cookies! They melt in your mouth and it’s hard to believe they are #gluten-free, #grain-free too. These are the best healthy chocolate chip cookies ever and will make them again soon!
- 2 cups almond flour
- 1 cup oat flour (can use all almond flour too, but I like the texture of adding gluten free oat flour)
- 1/2 tsp. salt
- 1/2 tsp baking soda
- 1/2 cup unsalted butter, room temperat
- 1/4 cup coconut oil, melted
- 3/4 cup brown sugar
- 2 eggs
- 2 tsps. vanilla extract
- 1 1/3 cup chocolate chips
Heat oven to 350 degrees. Line a baking sheet with parchment paper.
Combine the dry ingredients in a bowl and set aside. Beat the butter and coconut oil in a mixer, then add the brown sugar. Mix until well combined. Add the eggs, one a time, then add the vanilla. Add the combined dry ingredients, then the chocolate chips, mixing until just combined.
Refrigerate the cookie dough for an hour, or overnight. I like to use a #3 scoop or roll the dough, with your hands into one-inch balls and flatten slightly. Bake for 13-15 minutes or until edges are lightly browned. Cool on the pan for 2 minutes, then remove to a wire rack.
