Best Healthy Chocolate Chip cookies
March 12, 2025My boyfriend thought these were better than the traditional chocolate chip cookies! They melt in your mouth and it’s hard to believe they are #gluten-free, #grain-free too. These are the best healthy chocolate chip cookies ever and will make them again soon!
- 2 cups almond flour
- 1 cup oat flour (can use all almond flour too, but I like the texture of adding gluten free oat flour)
- 1/2 tsp. salt
- 1/2 tsp baking soda
- 1/2 cup unsalted butter, room temperat
- 1/4 cup coconut oil, melted
- 3/4 cup brown sugar
- 2 eggs
- 2 tsps. vanilla extract
- 1 1/3 cup chocolate chips
Heat oven to 350 degrees. Line a baking sheet with parchment paper.
Combine the dry ingredients in a bowl and set aside. Beat the butter and coconut oil in a mixer, then add the brown sugar. Mix until well combined. Add the eggs, one a time, then add the vanilla. Add the combined dry ingredients, then the chocolate chips, mixing until just combined.
Refrigerate the cookie dough for an hour, or overnight. I like to use a #3 scoop or roll the dough, with your hands into one-inch balls and flatten slightly. Bake for 13-15 minutes or until edges are lightly browned. Cool on the pan for 2 minutes, then remove to a wire rack.
