Quinoa Taco mixture

  • 1/2 onion, chopped
  • 1 garlic bulb, chopped
  • 1 can black beans, rinsed
  • 1 tomato, diced
  • 1 green pepper, chopped
  • 2 tsps. paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • a few dashes of cayenne pepper, optional

  • 1 can black beans, rinsed
  • 1 1/4 cup quinoa, cooked

Heat 1 Tbsp. avocado oil over medium low heat. Sauté onion and garlic till browned. Add the spices and cook for 2 minutes. Add tomato, beans, and quinoa. Cook until heated thoroughly. Serve over a salad, red cabbage, salsa, chopped onion, avocado, or your favorite topping.

This is a great dish to use leftover quinoa or rice!

*Substitute with rice, cauliflower rice or chickpeas
