3 cups water, 2 Tbsps. nori, shredded
1/2 block extra-firm tofu, pressed and diced
3 green onions
1 tsp. sesame oil
1 Tbsp. tamari
2 tsps. red or brown miso
Boil water, tofu, tamari, and nori 2-3 minutes. Remove the nori seaweed (can be used again). Turn heat down, add 2 teaspoons red or brown miso and a dash red pepper. Stir until miso is dissolved – do not boil to keep miso active. Serve with sesame oil and green onions.
Notes: To press the tofu, slice the block in half, and then in half again. Line a tupperware container with a paper towel, store one layer of tofu on top, place a second layer of tofu, with paper towel in between each layer and repeat. Store in your fridge and use over 10 days. Keep refrigerated.
