1/2 cup black beans
1 bulb garlic
6 cherry tomatoes, halved
1 15 oz. can salt-free diced tomatoes
1/2 avocado, sliced
1 Tbsp. nutritional yeast
1 tsp. cumin
1/2 tsp. cinnamon
Dash crushed red pepper
1 Tbsp. chili powder
1 cup quinoa, cooked

Sauté beans and garlic with spices. Add cherry tomatoes and diced tomatoes and let simmer 5 minutes. Serve over quinoa with avocado.
